Swedish Meatballs - Mrs. Paul C. Kuehner (Svenska Kottbullar)

Swedish Meatballs

1 cup soft bread crumbs
1/3 cup milk
1/2 cup minced onion
2 tbsp butter
3/4 lb finely ground raw beef
1/4 lb finely ground raw pork
1 egg, beaten
3/4 tsp salt
1/8 tsp allspice or paprika
1/8 tsp nutmeg
3 tbsp flour
1/2 tsp salt, dissolved in 1 cup top milk or thin cream

Soak bread crumbs in 1/3 cup milk 10 minutes. Brown on ion in 1 tablespoon buttter. Add to meat, egg, and seasonings. Then add this to crumb mixture. Blend ingredients thoroughly and form into balls 1 1/2 inches in diameter. Then roll in flour. Brown meat ballls in second tablespoon of butter and sprinkle with remaining flour. Add milk. Cover and simmer 15 minutes.
Yield: 20 meat balls (4 to 6 servings)
