Swedish Meat Balls with Sour Cream
Have butcher grind together:
1/2 lb round steak
1/2 lb veal steak
1/2 lb pork steak
Cook 1/2 cup chopped onion in 2 tbsp butter or margarine until brown. Mix well with meats: 2 slices bread that have been socked in milk and wrung out, 2 beaten eggs, 2 tbsp capers, 2 tsp salt, 1/4 tsp pepper, and 2 tsp Worchestershire sauce.
Shape into 2 inch balls. Chill until ready to cook. In heavy skillet, cook meat ballss in 1/4 cup butter or margarine until done. Remove from skillet. Drain off drippings. Mix in skillet, 1 1/2 cups sour cream, 1/4 cup heavy cream, 2 tsp dill weed, and 1/2 tsp salt. heat. Do not boil. Spoon over meat balls. Serve with rice.
