Scandinavian Rice Pudding - Mrs. LeRoy Sanders

Scandinavian Rice Pudding

1 cup uncooked rice
2 cups water
1/2 tsp salt
4 cups milk
1/2 cup sugar
1 cup whipping cream, whipped

Combine the uncooked rice, water, and salt in a heavy saucepan. Bring to a bol, cover, reduce heat and simmer for 15 minutes. Add milk and return to boiling. Reduce heat, cook uncovered, stirring occasionally. Continue cooking 'til rice has absorbed all the milk, ,approximately 30 minutes. Stir in sugar' cool. Fold in the whipped cream. Chill.
