Sauced Chicken Squares - Mrs. Oscar Hjelmervik

Sauced Chicken Squares

3 cups coarsely chopped, cooked chicken
3 cups white bread crumbs
1/3 cup celery
1/3 cup chopped onion
4 eggs, beaten
1/4 cup chopped pimento (optional)
1 tsp salt
dash pepper
1/3 tsp poultry seasoning
2 cups chicken broth
1 can condensed cream of mushroom soup
1/2 cup milk
1 3oz can mushroom drained and sliced

Preheat overn to 350 deg. In a large bowl mix chicken, bread crumbs, chopped celery, onions and pimento. Beat together: eggs, salt, pepper, poultry seasoning and chicken broth. Stir inchicken mixture. Pour into buttered 9x9x2 inche pan. Bake 1 hr. Cut into squares and serve with sauce made from 1 can mushroom soup, 1/2 can milk and mushrooms that are drained and sliced. Heat to boiling point.
Serves 5 to 9.
