Company Casserole - Mrs. I. S. Enderson (Hot Dish) (rice)

Company Casserole

2 cups long-grain rice, uncooked
1/4 cup butter or margarine
4 1/2 cups hot poultry broth or chicken bouillon
4 cups chicken or pork, diced
2 4oz cans sliced mushrooms, undrained
1 12oz pkg frozen shelled shrimp, cooked and split lengthwise
8 green onions, chopped
2/3 cup almonds, slivered
1/3 cup soy sauce

Put rice in shallow pan and brown in 400 deg oven for about 10 minutes shaking pan occasionally. Transfer to 3 qt. Casserole with cover. Add butter and stir to coat rice. Add broth. Cover and bake in 350 deg oven until tender, 35 to 40 min. Mix in poultry or pork, mushrooms, soy sauce and shrimp. Add green onions. Top with almonds, cover, abke in 400 oven 30 to 40 min. If dry, add a little water. Uncover the last 10 min. Serves 8.
