Rhubarb Orange Cobbler
4 cups rhubarb cut in 1 inch pieces (about 1 1/2 lbs.)
1/2 cup sugar
1/2 - 1 envelope orange flavored muffin mix
Place rhubarb in a shallow 6-cup baking dish. Sprinkle with sugar. Toss lightly. Cover. Bake at 400 degrees for 30 minutes. Meanwhile prepare orange flavored muffin mix according to package directions. Pour batter over hot rhubarb. Bake 20 miutes longer. Serve warm, plain or with cream. Yield 8 portions.
I have found that if you used 1/2 package f the orange flavored muffin mix that you have enough cobbler. We like more fruit with our cobbler. If you use the whole package of muffin mix, you will have a large amount of cobbler and not so much fruit.
