Mini Reubens - Alana Sippel

Mini Reubens

1 can corned beef
1/2 cup sour cream
grated onion
grated swiss or mozzarella
2 cups sauerkraut, drained and chopped
1/2 tbsp Thousand Island
salt and pepper
snack rye bread

Mix all ingredients except cheese. Spread the mixture on slices of the rye bread and bake at 400 until warm. Top with cheese and return to oven to melt.
