Marinated Mushrooms - Karen Fairchild

Marinated Mushrooms

1 lb mushrooms
2/4 cup olive oil
3 tbsp tarragon vinegar
1/2 tsp salt
freshly ground pepper
2 tsp miched fresh parsley
1/2 tsp dried tarragon

Wash mushrooms and slice them lengthwise. Combine all ingredients and mix will with mushrooms. Let stand approximately 6 hours at room temperature before serving. Refrigerate left-overs.
