Snepudding (Snow Pudding)
1 cup sugar
1 lemon
4 egg white
2 tbsp Knox gelatine
Soak gelatine in the lemon juice. Add sugar. Pour over this one pint of boiling water and stir until dissolved. Let cool. Then beat until light and fluffy. Whip egg whites and fold into mixture. When nearly firm pour into a serving bowl. Place in refrigerator. Serve with a cream sauce or thickened sweet fruit juice such as raspberry, strawberry, cherry, or grape.
Custard Sauce
3 cups milk
4 egg yolk
1/3 cup sugar
1 tbsp corn starch
1 tsp vanilla
pinch of salt
Scald the milk. Beat egg yolks well. Add sugar, cornstarch, vanilla and salt to yolks. Then add this to the milk gradually. Beat well. cook until thick.
