Potato Hot Dish

4 or 5 cups sliced raw potatoes
1 large onion, chopped
1 green pepper, chopped
1/2 cup sliced celery
7 or 8 slices of bacon
3 cups whole tomatoes, juice and all (canned)
1/2 tsp pepper
1/8 tsp oregano
1/2 tsp thyme
2 tsp salt

Cut bacon into small pieces and partially cook. Mix all ingredients together and place in a 2 quart casserole. Fress down so that tomato juice covers. You may have to add 1/2 cup water to get enough liquid. Bake at 350 deg for 1 1/2 - 3 hours or until potatoes are tender. Will serve 8.
