Norwegian Rice - Mrs. Gust Stensland

Norwegian Rice

1 qt of milk
1/2 cup rice
boiling water
3/4 cup sugar
1 tsp salt
1/2 cup rich milk

Scald the rice in boiling water. Drain and add the rice to the milk. Let cook very slowly in double boiler for about 1 hour or until nearly done, stirring often to separate the rice. Add 3/4 cup sugar, 1 tsp salt, 1/2 cup rich milk and cook until done. Put in bowl and sprinkle lightly with cinnamon and butter on top.
