Norwegian Lemon Bars
1 cup flour
1/2 cup butter
1/4 cup powdered sugar
2 eggs beaten
1 cup sugar
2 tbsp lemon juice and grated lemon rind
2 tbsp flour
1/2 tsp baking powder
Mix together the first 3 ingredients and put into an 8 x 8" pan. Bake 15 minutes in moderate oven (350 deg.) Mix together eggs, lemon juice, rind, sugar, flour and baking powder. Pour over baked crust. Bake 20 minutes longer. Frost with 1 1/2 cup powdered sugar 1 tbsps butter, jusice and rind of 1 lemon, 1 tbsp cream. Mix and spread on bars.
