Lemon Jello Cake - Mrs. Hans Aleckson

Lemon Jello Cake


1 pkg Betty Crocker Lemon Velvet Cake Mix
1 pkg lemon Jello
4 eggs
3/4 cup water
3/4 cup Wesson* oil
2 lemons
2 cups sifted powdered sugar

In large mixing bowl, combine dry cake mix and dry lemon jello. Mix with fork. In a 2nd bowl, break 4 eggs and beat with a fork, add 3/4 cup water and oil. Stir. Pour liquid into dry mix. Beat at high speed 4 minutes. Bake 35 minutes at 350 deg.
Grate rind of lemons into 2 cups powdered sugar. Squeeze lemons and add juice. When cake is done and hot, puncture with long-tined fork and drizzle glaze over top. Serve with unsweetened whipped cream.
