Head Cheese - Mrs. Walfred Newman

Head Cheese


One hog's head soaked in cold water overnight. Wipe dry and cut out as much bone as possible. Boil 'til it slips off the bone. then lay it on a clean cloth, skin down. Pick out all the bones and don' take too much fat. Season with salt and pepper and a little ground spice if you wish. Put in a clean cloth and put into a bread pan or cake pan depending on amount. Put a heavy weight on top until it is cold. Then lay in brine to cover.

Brine
1 cup salt to 2 quarts water, boil and cool.

Two quart jars filled with water for weight on a bread pan works fine.
