Grandpa Holland's Scandinavian Pancakes - Mrs. Alfred Holland

Grandpa Holland's Scandinavian Pancakes 

3 eggs
1 1/2 cups sweet milk*
pinch of salt
1 1/2 cups flour
1 tsp sugar

Bake in a pancake griddle. 2 1/2 or 3 tbsp should make a pancake about the size of an 8" plate. Have a hot frying pan with a little melted butter in it, turn so both sides have been buttered. For each cake you must add a little butter. Fold over in halves, then fourths.  Place in a pan or casserole to keep warm until all are made. This recipe makes 10 to 12 cakes. This recipe does not have any soda or baking powder. Eggs serve that purpose and cakes are very thin.
Can also be served as soon as they are fried, spread with butter..roll or stack and serve with maple syrup.
