Company Ham and Eggs - Mrs Alfred Holland

Company Ham and Eggs

4 eggs
1/4 cup milk
dash salt and pepper
1 tbsp butter or margarine
4 slices square luncheon meat
4 pieces 2"x2" cheese

Beat together eggs, milk, salt and pepper. Scramble egg mixture in hot butter. Place meat slices on a baking sheet. Top each with a piece of cheese. Bake at 360 degrees a  few minutes until cheese melts. Spoon equal portions of scrambled eggs on each meat slice. Fold up. Secure corners with toothpicks, if desired. Re-heat in oven, if necessary. Yield: 4 portions.
