Citron Fromage (Lemon Snow)
3 egg yolks
1 cup sugar
1 envelope Knox gelatine
2 lemons
1/2 pt. whipping cream
3 egg whites
1/2 cup cold water
Beat yolks and sugar until lemon colored. Soak gelatine in cold water, then melt over hot water. Add the lemon juice and a tsp of grated lemon rind to the gelatine and yolk mixtures. Let stand until it begins to thicken. Fold in whipped cream and lastly the beaten egg whites. Store in refrigerator. Garnish with whipped cream or slightly thickened fruit juice.
