Shrimp Quiche - Mary Ann Jakobe

Shrimp Quiche

1 butterflake dinner rolls
1 1/3 oz swiss or cheddar cheese grated
1 tbsp brandy
4 1/2 oz fresh frozen shrimp (thawed and drained)
1/2 cup heavy cream
1 egg beaten
1/2 tsp salt and dash of pepper

Grease small muffin pans. Divide rolls in half. Line muffin cups with dough. Put 1 shrimp in each muffin cup. Combine remainder and pour small amount over each shrimp. Top with cheese. Bake 375 degrees for 20 minutes. May freeze after baking. Reheat 10-12 minutes at 375 degrees.
