Norwegian Wheat Bread
2 1/2 cups milk
1/2 cup butter
2 pkg dry yeast
1/2 cup sugar
2 tsp ground cardamom
1/2 tsp salt
7 to 8 cups flour (white)
Heat milk to scalding with butter. Pour into large bowl and cool to lukewarm and stir in yeast. Sift flour, sugar, cardamom, and salt and add to milk. Stir well. Then knead in more flour to make dough smooth and elastic. Place in buttered bowl, and cover and let raise till double. Punch down. Let rest 10 to 15 minutes. Then divide in half and knead lightly and put into loaf pans. Cover and let rise until double. Bake 30 minutes in preheated 350 deg oven. Brush with btter when baked. Makes 2 loaves.
