Julekake (Swedish Christmas Bread)
1 cake or 1 pkg yeast
1 cup sugar
1 1/2 cups milk
3 beaten eggs
3/4 cup melted shortening
8 cups flour
1 1/4 tsp salt
2 tsp cardamom seed
3/4 cup citron
1 1/2 cups raisins
Scald milk, cool to lukewarm. Add yeast, sugar, well beaten eggs, melted shortening, salt, cardamon seed, citron and raisins. Add flour and knead until light. Let stand till double in bluk. Knead again and shape into loaves. Let rise until double. Bake in moderate oven 350 deg. 30 to 40 minutes. This recipe makes three loaves.
