Grandpa Holland's Rice Pudding
1 qt rich milk
3/4 cup rice, washed
1/2 tsp salt
1/3 cup sugar, more or less as desired
1-2 cups rich milk or cream or more as needed
In heavy sauce pan or top of double boiler combine washed rice, milk and the salt. Put on lowest heat possible -- it should never boil! Start this in the morning around 10:00 am and stir occasionally. The more you stir the fluffier the rice will be. It will gradually thicken in the afternoon. As it becomes thick add the sugar and more rich milk or cream. Keep adding milk or cream and stirring often until serving time of your evening meal. Serve warm with milk or cream, plumped raisins, cinnamon and sugar. You do not have to cover the rice while cooking.
A family favorite always served at Christmas time. Grandpa Holland made this on the back of the old-fashioned cook stove. He would just keep the milk hot -- never boiling and stirring often!
